Basic roast chicken with salad and sweet potato tn. Gonna use the leftover chicken in burritos tmrw. Let's see if I can roll them this time, or if I will cry.

Toddler and dad loved the side dish, I decided to make a peanut ginger slaw instead of carottes râpées or watevurr
Peanut ginger dressing:
1/4 cup maple syrup
1/4 cup oil
1/4 cup vinegar (i used white but rice wine would be better)
1 tbsp maggi seasoning/soya sauce
1 tbsp peanut butter
Inch or two of ginger
2 cloves garlic
If i didn't have the kid to consider I'd add a touch of sriracha or hot sauce :)
Salad:
3 leaves of cabbage, shredded (about 3 cups)
2 large carrots, grated
1 bell pepper thinly sliced
A few of any other crunchy veg you have. Today I used radishes
1/4 cup chopped cilantro
Handful of peanuts
I would also like to add hot pepper, like thai chili
Mix dressing ingredients in the bottom of the bowl. Add salad stuff. It takes longer to cut than to put together! You could use a regular coleslaw pre cut mix thing and add bell pepper and whatever else is missing.

Wednesday: lancashire hotpot or cottage pie

Pickle some beets and re set the rest of the jams

I made this creamy salad vinaigrette and it looks just like from the store I'm unreasonably hyped about this, LOOOOK
It is simply a vinaigrette with red wine vinegar, garlic, spices, mustard as usual, and then i added a few tbsp of mayonnaise too

Pre-dinner was too chaotic to take pics but be white and picture in your head... beef kofte... tabbouleh...... tzatziki........ hummus....... very very crispy roast potatoes.............
