Best 2 gluten free Bread with 0 rise in blood sugar in healthy people. Use any of them. In diabetics too the rise in blood sugar will be minimum (10-20 points) and nearly zero if diabetes is in control.

If you use desiccated powder then Blend both of them to mix well and to reduce the particle size of coconut desiccated powder.
No binder is needed such as guar gum to make flatbread. You can use eggs or yoghurt to make bread soft.

When using guar gum, mix it with dry ingredients before adding liquids to ensure even distribution and avoid clumping. let it sit for an hour and then roll into flatbread and bake on a griddle.
