Quark is a versatile and beloved dairy product that holds a special place in many European kitchens. Though often overlooked outside of Europe, it’s a staple in countries like Germany, Austria, Switzerland🇨🇭, Poland, and the Netherlands.
The word "quark" comes from the German term for "curd" and is thought to have originated from Eastern Europe, with a history that dates back centuries! In fact, its roots can be traced back to the ancient farming communities who first learned to ferment milk and make cheese-like products. Over time, quark became a common food in European diets, appreciated for its smooth texture, tangy flavor, and nutritional benefits.
🌸How Quark is Made
Quark is made by fermenting milk, typically cow's milk, (although goat and sheep milk can also be used) The process normally begins with heating the milk and adding a bacterial culture, similar to yogurt. The bacteria ferment the lactose, causing the milk to thicken and form curds. The whey-liquid is then drained off. The texture of quark can range from smooth and soft to slightly firmer, depending on the moisture content and how long it's drained.
My farmer doesn't heat the milk but cultures it still warm after milking, thus leaving the product raw. He is an old man and a true master at his craft ❤️ I have not found a comparable product on any market (forget about stores!)

It’s also a key ingredient in many traditional European desserts, such as the famous German Topfenschmarrn or the Austrian Käsekuchen (cheesecake), which uses quark in place of cream cheese.
