INGREDIENTS

- 3 ripe banana
- 120 g (1/2 cup) creamy peanut butter
- 50 g (1/2 cup) cocoa powder
DIRECTIONS
- Preheat oven to 180°C (350°F) and fold a brownie pan with parchment paper.
- Mash 3 ripe bananas then add peanut butter and stir the mixture until smooth.
- Sift in cocoa powder, give it a mix and transfer to the prepared brownie pan.
- Bake in hot oven for 22 to 30 minutes – mine took 27 minutes. Let cool completely at room temperature before slicing.

No Bake Carrot Cake 😍🥕

- 150g grated carrot
- 350-300g pitted medjool dates
- 300g walnuts / almonds / pecans
- 3 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ground ginger
- 1 tsp vanilla extract
- 1 pinch salt
- 3 tbsp dairy free milk
- 90g oats, ground to a flour in a blender

Frosting:
- 160g cashews, soaked overnight or in boiled water for 20 minutes
- 200g coconut milk (the thick, creamy part at the top) or you can use pure, thick coconut yoghurt
- 3 tbsp maple syrup
- Juice of half a lemon
- 1 tsp vanilla extract
- Splash dairy free milk

DELICIOUS LEMON DESSERT🍋👇

🔪Ingredients:
🍋Lemon: 3 pcs.
🍋Coconut Cream: 250 ml. (1 full glass)
🍋Sugar: 3 tbsp.

We take out the pulp from 2 lemons, and remove the zest from the third and squeeze out the juice. In a saucepan, combine cream, sugar and zest. Bring to almost a boil over medium heat.
Then pour in the juice of one lemon, strain and pour into lemon molds, put in the freezer for 2 hours and decorate beautifully.

SPINACH PASTA 🍝

I’ve liked spinach my whole life, but if I didn’t, this dish would have convinced me.
😉
RECIPE (2 servings):

-3 large handfuls of spinach
-12 tbsp flour
-a pinch of salt
Mix until a dough forms.
Knead a few times by hand and cover while making the sauce.
Sauce:
-3 large handfuls of spinach
-1/2 bunch of coriander or parsley
-Salt and pepper to taste
-30g cashews
-2 tbsp olive oil
-Juice 1/2 lemon
Mix until creamy.
Heat up a pot of salted water.
Cut the dough into the water using a scissor and cook until the pasta float to the top.
Scoop off and mix with some of the pesto in a pan.

Ingredients

1 can chickpeas
1/4 cup tahini
1 tbsp peanut butter
3 tbsp brown sugar
3 tbsp maple syrup
1/4 cup + 1 tbsp oat flour
2 tsp vanilla
Sprinkle salt 🧂

Directions 🗺
1. Drain, rinse and dry your chickpeas!
2. Add to a food processor; along with all the ingredients above - pulse until smooth
3. Next add your chocolate chips and fold them into the dough
4. Scoop them onto a cookie sheet and let them set in the fridge for 15 minutes; pop in the freezer for 5 and enjoy!

🌱CRUST 🌱
🌱1 1/2 cup pitted dates
🌱 3/4 cup raw almonds
🌱Pinch of salt

🌱FILLING 🌱
🌱3 cups raw cashews
🌱1 small lemon juiced
🌱4 tbsp maple syrup
🌱1 cup coconut cream

🌱TOPPING🌱
🌱 1 cup raspberries
🌱 Almond milk

INSTRUCTIONS
🌱 Combine crust ingredients in a processor and blend until dough forms. Transfer into an 8” cake mould and flatten
🌱 Combine all the filling ingredients in a blender or processor and blend till smooth then pour over crust- freeze while prepping next layer
🌱 Blend raspberries and pour over then pour on top of the filling
🌱 Freeze for 4-5h and let it thaw for about 10-15 min before serving|

Raspberry Coconut Bars ❤️

140g desiccated coconut
190g frozen raspberries
2 tsp vanilla extract
4 tbsp maple syrup
250g good quality dark chocolate (or chocolate of choice)

Line a loaf tin with baking paper

Add the coconut, raspberries, vanilla and maple syrup to a food processor and pulse for a few seconds until it starts to come together

Press into the loaf tin and place in the freezer until solid (1-2 hours) - slice into bars and place back in the freezer while you melt the chocolate

Coat each bar in chocolate (use 2 forks to do this!) place back in the freezer to set 🫶

Say “YUM” if you would eat these Healthy Fruit Roll Ups 🍓

Ingredients:

2 cups strawberries
Juice of 1/2 a lemon
Optional:
1/4 cup sweetener

How to make them:
1. Blend all ingredients.
2. Bring to a boil for 10 minutes.
3. Spread evenly on a parchment lined baking sheet.
4. Bake 170F for 3-4 hours.
5. Carefully peel between the original parchment paper and another piece. Slice into whatever shapes you prefer, roll them up & enjoy!

By the way.. You can do this with any fruit and they taste so delicious 😋🙌

Pro tips:
If you want to skip the boiling step, you totally can but it will take 6-7 hours in the oven instead of 3-4. 👍
If your oven doesn’t go down to 170, a lot of oven style air fryers have a dehydrate setting that goes to 170°F.

300g enoki, cut into chunks
200g plain flour
1 tbsp all purpose seasoning
1 tsp cayenne
1 tsp paprika

4 ingredient Chocolate Oreo Ice Cream 🍫🍨 dairy-free, vegan, and kid approved. Creamy Ice cream with out those added gums

You”ll need:

3 pitted dates
1 can of full fat coconut milk
1/4 cup coco powder
Freeze into ice cubes. Once frozen let thaw slightly before adding them to a blender or food processor. Pulse until it becomes a crumbly texture then add the cookies, and pulse again until combined. Serve immediately and serve with additional crushed cookies, optional but recommended. Let me know if you try this one!

Cucumber avocado crispy rice✨

For the Crispy Rice:▪️Parchment Paper▪️3 Tbsp Avocado Oil▪️2 Cups Cooked Jasmine Rice▪️Kosher Salt▪️

For the Dressing:▪️2 Tbsp Soy Sauce▪️1 Tbsp Sesame Oil▪️3 Tbsp White Vinegar▪️1/4 tsp Sugar▪️

For the Salad:▪️3 Medium Persian Cucumbers, diced (~1+1/2 Cups)▪️1 Medium Avocado, diced▪️1/3 Cup Shelled Edamame▪️1/4 tsp Sesame Seeds▪️

1️⃣Preheat the oven to 450F convection
2️⃣Line a small baking sheet with parchment paper and add the avocado oil and rice; toss the rice in the oil and spread into one layer then sprinkle with salt
3️⃣Convection bake for 10 mins, stir, then bake another 5-8 mins until the edges of the rice are golden brown and crisp
4️⃣Whisk together the ingredients for the dressing and add the ingredients for the salad to a bowl; pour on the dressing on the salad and toss
5️⃣Transfer the salad onto plates and top with the crispy rice and a sprinkle of sesame seeds - enjoy!

⏲️15 minute prep time + 15 minute cook time
