I make my cherry pie from about 4-5 cups of pitted cherries mixed with a half cup sugar, a quarter cup of flour, a heaping tablespoon of vanilla bean powder, a grating of orange zest and a pinch of salt.
I pile the filling into a pie shell and top with a lattice then bake for over an hour at 350° - until the middle is really bubbling and boiling - which tells me that the filling is cooked through.

Bluebell season is beginning early in my part of England this year because of all the sunny spring weather we’ve been having. I’m already seeing some in flower, and within the next couple of weeks there will be woods that look like this again.

A reminder to keep to the paths if you visit a bluebell wood, the flowers are delicate and they might not grow back if they’re squashed. These bluebells are in Worcestershire near where I live, but there are woods like this all over the UK. I suggest you find the one nearest to you and spend some time there on a sunny evening in the latter part of April, there’s nothing so close to heaven on earth in my opinion.
