Poached pork belly, pickled carrot & onion, coriander, furikake 🧡🧡🧡
Super simple dish to make, by poaching pork belly slowly for 90 minutes in chicken broth with a little 5 spice and ginger. Once cooked simply slice and pop on the plate. To make the pickled carrot and onion, place apple cider vinegar in a pan and warm with the sliced carrot and onion and cook for a few minutes then I added a little of the broth to form a sauce and some organic toasted sesame oil. Place on the pork with the fresh coriander and sprinkle with furikake. The secret of this dish is to have it really sharp from the vinegar to cut through the rich fatty pork. 🧡🧡🧡.

Mullet, squid ink mayo, organic sprouting broccoli & grapefruit. 🧡🧡🧡
Third day of the mullet adventure. I left these fillets in the fridge for a couple of days uncovered to get the skin super dry, then lightly salted the skin and flesh and pan fried mainly on the skin side until crispy. In the same pan I added in the blanched broccoli once the fish was removed with extra virgin olive oil, dried garlic and chilli and when cooked finished it with a good splash of vinegar. Mayo was just organic mayo mixed with squid ink and a wedge of grapefruit from the orchard. So delicious and 10 minutes from start to finish. 🖤🖤🖤

Picked up some very fresh local Mullet today after my morning surf. The mullet was under $10 for 600 grams of fillets.
Simply pan fried and served with organic green curry paste and coconut cream, a splash of fish sauce and lime juice. Finished with Thai basil from the garden and a sprinkle of Japanese togarashi powder. Under 10 mins from start to finish also.
